Strawberry Avocado Spinach Salad with Chicken

Dressing and marinade:
¼ cup extra virgin olive oil
1 tablespoon golden balsamic vinegar
1 teaspoon sugar
¼ teaspoon kosher salt
*Often I skip the homemade dressing use a strawberry poppyseed vinaigrette


2 boneless, skinless chicken breasts
6 cups loosely packed fresh spinach
6-8 large strawberries, hulled and quartered
1 avocado, peeled, seeded and cut into chunks
¼ cup feta cheese (optional)
2 tablespoons sliced almonds

Instructions

If you are making homemade dressing whisk the extra virgin olive oil with the balsamic vinegar, sugar and kosher salt in a small bowl until blended.

Place the chicken breasts in a shallow bowl and cover with half of the dressing, cover and refrigerate for 30 minutes to 2 hours. (or usually I just use leftover grilled chicken)

Grill  the chicken.

Arrange the spinach and strawberries in a bowl. Lightly toss with the remaining dressing. Add the avocado, sliced chicken and top with feta and almond slices. Serve immediately.

Pistachio Pudding Salad


1 large pkg pistachio pudding
1 large pkg vanilla pudding
Cool whip, thawed
mini marshmallows
bananas, pineapple, or other fruit (optional)




Combine both boxes of pudding, and make according to package directions (sometimes I use a little less milk than it calls for because I like it thicker).  Refrigerate until thick.  Mix in about 1-1/2 cups cool whip, marshmallows and fruit.

Green Salad



6 slices bacon (cooked and broken)
8 oz shredded mozzarella
1 head lettuce
1/2 bag spinach
1 red onion, chopped
Mandarin oranges,  Strawberries, apple slices, etc

Dressing:
3/4 C. Sugar
3/4 C. Oil (Olive or vegetable)
1/2 C. Vinegar (red or white)
3/4 Tbsp. Poppy seed
3/4 tsp. salt
1/4 tsp. dry mustard

Mix dressing a few hours before using so the sugar will dissolve completely.  Put dressing on the salad just before serving.

Broccoli Salad

3 heads of broccoli (or broccoli/cauliflower combination)
10 strips of bacon, cooked and crumbled
1 small onion, diced
1 C. grated cheese
Sunflower seeds
Craisins, raisings, etc.

Dressing:

1 C. Mayo
1/2 C. Sugar
3 Tbsp. Red Wine Vinegar
